How long have you been operating your business?

Three years.

 

What inspired your passion for catering?

Working in local Portland restaurants during culinary school piqued my interests in working for myself in food service.

 

What gave you the idea to create a food truck?

While waiting for a breakfast brunch table to open at a local restaurant on a weekend, I decided to create a breakfast/brunch/lunch food truck for services on the Eastern Promenade in Portland so breakfast, brunch and lunch didn’t require a table for service. I wanted to create a no-wait/outdoors venue for people to gather and enjoy a meal without the confinements of a table or dining room.

 

How would you describe your fare and service style?

Simple. We focus on simple flavors and menu ideas, and do them well. Rather than attempt to create menu items which wow the customer, we chose to focus on what already sells on menus across the state- and refine the structure of the sandwhich and make it as flavorful as possible.

 

Please provide an example menu of your breakfast creations with pricing.

Our brunches start at $1600 as a base rate for up to 75 people. Over 85 is $20 per person, including tax and tip. French’s point is going to incur a $400 travel (from portland) fee which covers road expenses, fuel and labor travel time. for that price I offer a four option menu (breakfast biscuits of either bacon or sausage) handmade crabcake croissants with a lemon-ginger aioli, shaved red onion Gruyere cheese and an over medium fried egg, and a choice of sweet potato or pulled pork breakfast burritos with handmade black beans, greens, sliced scallions and sharp cheddar cheese. we can offer this as half portions (crab cake and burrito, biscuits are standard) as a buffet or per person ordering (full portion). Coffee is included (hot and iced) and I don’t mind picking up a few gallons of OJ. Food is served on paper and foil.

 

What is your favorite menu option?

the crab cake croissant with gruyere and shaved red onion.

 

Can you accommodate food allergies?

absolutely.

 

How early in advance should our clients reach out to you when planning catering for their wedding weekend catering?

six months is preferred, since our calendar begins filling 12 months prior to dates and books full by July for the remainder of the season.

 

What is your favorite day trip in Maine?

Hands down, route 35-5 from Harrison to Bethel – Gorham NH and back through Bridgton via motorcycle in late summer.

What inspired your passion for catering?

No doubt I was inspired by my mother and two grandmothers…all of whom were excellent (and often inventive) cooks.  I was always underfoot in their kitchens, asking if I could help…and even if I could prepare the entire meal.  At the age of 11, I was asked by a university grad student, newly arrived from India, to help him and his wife learn to cook “American style” food.  I guess I was ‘hooked’ at that point.  In addition, I have always had a desire to create, to please clients, and to work with co-workers who are as compassionate about their work as I am.

 

What food items would you suggest to a client hosting a destination wedding in Maine?

Sustainable products from Maine (seasonal vegetables and fruits, lobsters, clams, oysters, salmon, haddock, scallops) wherever and whenever possible.

 

Do you cater rehearsal dinners and other various wedding weekend meals?

We can provide services for rehearsal dinners, sports events kickoff continental breakfasts, brunch, picnic lunches, lobster bakes, and welcome receptions…along with after parties.

 

Please describe your ideal client.

The ideal client: someone who can verbalize what they want in terms of the overall design theme and who can articulate what they like for food…then leave it all to us to propose the complete package for their final approval.

 

How would you describe your wedding fare and service style?

Our wedding fare is generally described by our clients as “the best wedding food we’ve ever had” and tied for first place with the service staff who are always polite, attentive, helpful, and don’t know how to say ‘no’.   Whatever (within reason and the regulations of French’s Point) they want we should be able to provide.

How would you describe your products and service?

Cakes for All Seasons is a custom dessert studio creating cakes, sweets and other treats, from scratch, for weddings and other special occasions, using the finest ingredients. I love a challenge and am happy to create special recipes or family favorites for my clients.

Providing gracious, responsive service, I ensure that all of your questions are answered and your needs are met. Wedding cakes are delivered throughout southern and coastal Maine and New Hampshire.

My brand new commercial kitchen and showroom is located in the old Pepperell Mill in Biddeford.

How long have you been operating your business?

I’ve been baking for clients for the past 25 years but have focused on wedding cakes since 2013.

Can you accommodate food allergies?

I can accommodate most food allergies. I am not an allergen free kitchen, however.  This week I had a tasting with a bride who is allergic to eggs. She loved my vegan chocolate cake and is having white chocolate cream cheese frosting on her wedding cake, in place of my usual Italian meringue buttercream.

 

What’s the average cost per person for your product?

$6- $9 per person. Some are more, some are less, depending on flavors and decor.

 

Describe your range of design style.

Most of my cakes have a casual or classic feel, with soft buttercream and fresh flowers.  Naked cakes feature fresh fruits and greens. Fondant allows a range of design elements, including marbled finishes , ruffles, plaques with piped monograms, metallic accents and dramatic colors.

What is your absolute favorite dessert?

Nutella straight out of the jar, minimal clean-up and I don’t have to turn on an oven.

 

What is your favorite day trip in Maine?

Anything that gets me out on the water. I grew up on sailboats so delivering cakes to islands or coastal venues is a lot of fun for me.  Riding the Casco Bay Ferry Lines along its summer route is a big treat.

What inspired your passion for bridal fashion?

My biggest passion has always been for business. Since I was a child, I’ve always wanted to operate my own business. I grew up going to leadership camps and reading personal development books. As I got older, I developed a passion for fashion and interior design and loved getting to experiment with both as an adult. When the opportunity came to purchase my first bridal shop, it seemed like the perfect fit for all of the things I was passionate about.

 

How many locations do you have and how do they differ?

We have 3 locations- Portland, Bangor, and Presque Isle. We carry everything from casual dresses to prom, bridesmaids, and wedding gowns in all locations. However, the selection does vary based on price point and trends that are successful in each area. In addition, we recently added an online casual clothing boutique.

 

How would you describe your style and services?

As a brand, Blush is about so much more than selling a dress. Our mission is to use the experience of dress shopping to serve, celebrate, and empower women. As a woman owned business, we’re extremely passionate about delivering an experience of excellence that will become a treasured memory for the women who trust us in their search for the perfect dress. We combine the flexibility of being a small business with the organization and structure of being a multi-location corporation to provide our guests with a unique atmosphere that is consistent, safe, inspiring, and feels like home.

 

Please provide us with a sample of different gowns at different price points.

We carry gowns starting around $1,000 and up to $5,000, depending on location. We also carry a selection of sample sale gowns that can be found at even lower price points. We can work with very conservative budgets as well as create customized couture gowns. We’re also very proud to carry a curated collection of wedding dresses exclusive to Blush, Ana Sophia. These gowns aren’t pictured anywhere online except our website & offer brides gorgeous styles that they won’t see all over Pinterest.

 

When making an appointment to try on bridal gowns, how many guests do you recommend they bring along with them?

We recommend bringing only a few of the people closest to you for your bridal appointment. This helps ensure a calming, quality experience for the bride. We can definitely accommodate larger parties, but don’t find that the best experience for most brides.

 

Are there any items they need to bring with them? Should they have a specific style in mind?

The most important things to bring to a bridal appointment are an open mind and a positive attitude. While basic undergarments are important, being in the right mindset for such a key life moment is our number one tip. Finding the perfect dress can be like finding the perfect partner- you never know when it’s going to happen! Being ready for that magic to happen is SO important.

 

How early in advance should our clients book an appointment with you and when do they need to purchase their wedding gown?

The best time to purchase a special order wedding dress is 9-12 months prior to the event. Although we can most definitely work with shorter timelines, allowing ample time for the dress to be created, shipped, and altered is important to minimize stress. Scheduling an appointment with Blush a few weeks in advance will help ensure better availability, especially if one is looking for a Sunday appointment.

 

Once customer’s purchase their wedding gown, what are the next steps?

Once a gown is ordered, it’s a good idea to contact a seamstress right away (we can provide a list of options) & schedule a fitting for after the dress is scheduled to arrive. Then, it’s time to start shopping for bridesmaids’ dresses and accessories.

 

Do you also offer bridesmaids dresses? If so, what designers do you have available and what is the price range?

We do! We carry a variety of different designers in each store (shown on our website). On average, they range from $150-350.

Describe your range of design style.

Each cake design is tailored to reflect my clients’ vision, as well as the style, colors, and inspiration elements of the event board. If a client does not have a clear vision for the cake, I am thrilled with the challenge to create a truly unique design using various techniques or mediums otherwise underused.  Designs ranging from clean & modern to rustic & organic or whimsical are each carefully crafted to be an elegant centerpiece of each special event.

 

What is your absolute favorite dessert?

Ooooh – that’s a tough one!  I’d say it’s a toss-up between warm homemade apple pie topped with vanilla bean ice cream or classic creme brulee – breaking through that crisp caramelized sugar top to the dreamy cream below makes my heart happy!

 

What is your favorite day trip in Maine?

This is a tricky question as my favorites change with the season – whether it be beach days and lobster shacks in the summer, picking apples at the local orchards in the fall, or hitting the mountains and snowshoe trails in winter.  However, during any season our family always enjoys heading to Mackworth Island to walk the trails, search for shells and pretty rocks along the beach, and hunt for fairy houses and then build new ones!

Couples are always looking for ways to make their wedding weekend experience fun, memorable and unique. Because weddings are so trend influenced, the food truck movement has made it’s way into the wedding weekend at French’s Point too. We often get the question “Can we use a food truck for our wedding weekend at French’s Point”. Our answer is, sure you can.  But here are some things to consider first:

Food Truck Logistics

First, food trucks are not caterers in most instances. They do not handle setup or breakdown during events, they do not buss tables, clean up waste, manage rentals, or communicate with the rest of the event team like a caterer would. Therefore, the responsibility of these tasks will then fall to your planner. For this reason, a food truck should certainly be discussed with your planner first before they are hired.

How Many Food Trucks Do I Need?

Secondly, food trucks can put out a large volume of food in a short period of time, but not in the volume needed in the time allowed at a wedding celebration. In our experience, we feel you will need one truck for every fifty guests you are serving, in order to put out the correct volume of food in less than one hour of service time. If you have 150 guests to serve, then three food trucks should be hired. Each food truck is different and some have more wedding event experience than others, so you should discuss this and your timing expectations with the food truck directly.

How would you describe your ideal client?

Any client is our ideal client. As cheesy as that sounds, we love working with clients, no matter whether they have any ideas about their event or none at all – getting to know them is one of our favorite parts of the planning process! Although, a love of food is a must! If great food (and service) isn’t a priority for a particular couple, we likely won’t be a good fit for their event.

 

What is your favorite moment on the wedding day?

I’m a total sucker for when the couple sees one another for the first time. The raw emotional beauty of that unveiling is so wondrous. My second favorite, which is a close second, is that moment when the couple looks around in awe and just basks in the love of having their family and friends gathered in one place to celebrate their marriage. Because, there’s always that moment – when they’re sitting down to listen to toasts or when they’ve finished eating a bite to eat and they look around at everyone gathered…I always feel truly honored to witness that moment.

 

What is your favorite day trip in Maine?

One of my go-to ways to relax is to head into the woods for a long walk or hike. Living so close to Acadia National Park, this is certainly easy enough to do, but I love to escape to a more remote location. Moosehead Lake has been a very special spot for me for nearly 25 years. Whether I’m exploring the woods, kayaking on the lake, or laying on the beach staring up at the stars, it’s where I always feel the most at peace.

I started “From This Day Forward” in 1999 to focus on brides looking for on-site makeup services. A salon in Boothbay Harbor had heard about me and asked if I was willing to help with bridal makeup because they didn’t offer that service. I was a makeup artist trainer prior to that for a private label cosmetic company and was ready to take on a new challenge. From there, it was all word-of-mouth around the state and I’ve never had to pay for advertising. 

 

How would you describe your services?

I specialize in the soft, natural look today’s bride is looking for, but can get as dramatic as one wants.  I offer airbrush or liquid minerals and each client receives a complimentary fresh tube of lipstick to freshen up with during the day and also human hair lashes for those who want them. Some of my clients refer to my demeanor as “laid back, easy to work with and without drama”. I take that as a compliment!

 

How long does it take per client on their wedding day to do their makeup?

I like to plan on 30 minutes per person, although not everyone takes that long. I also allow a little extra time for those who decide at the last minute that they want theirs done as well.

 

Would you recommend always doing a trial run before wedding day for the client? How much does a trial cost?

It’s not necessary for me to do a trial, but it is much more vital to brides, especially those who have had bad experiences having their makeup done professionally in the past—or those who have skin allergies or don’t usually wear makeup. It helps them check one more thing off on their list of concerns before the wedding. Trials are included in the bridal fee.

 

What would be your most sage advice for a client having an outdoor wedding in Maine?

I offer them advice pertaining to the season they have chosen. Maine is a gorgeous place to get married anytime of the year, but I find some of my destination brides need to plan on the things that they may not be familiar with in their own area. Things like fog, mosquitoes, icy conditions, or even heavy rainstorms. I think that is one of the things I admire most about the wedding planners at Frenchs Point, they always have the bride’s back on the unexpected and they take on the stress rather than the bride.

 

Do you like to see pictures of the client’s attire before the makeup trial? Is it okay for clients to send you photos of makeup styles they like?

One of the things I really enjoy is seeing their dress and accessories. I have always been into fashion and seeing the style they’ve chosen gives me a vision of the look that would be perfect for their big day. Many of my brides have themes such as Gatsby, 1960’s, Old Hollywood, etc. Some haven’t been able to put a name on the look and together we come up with themes like “Romantic”, “Magical”, “Boho”, etc.  The artist in me really comes alive when we agree on a look.

Some brides are logistically unable to have a trial before the wedding, so we stay in touch through email and I put all the photos she sends me in a folder to bring along that day. I’ve also had last minute wedding requests where the bride really hasn’t been able to describe the look she has in mind, but within 10 minutes we’ve figured it out together. 

 

Do you enjoy working on location?

I love working on location! It is a real pleasure to be part of the excitement. By the time I pack up to leave I feel like I’ve been part of their “tribe” and anticipate the photos that I will be able to share on my website. So many times I’ve seen the bride again when she has recommended me to one of her friends. I love that! 

 

What is your favorite day trip in Maine?   

I think my favorite is when I travel to an island by ferry. It really brings out the “Maine” spirit that needs to be part of the wedding flair. It’s always a great feeling being asked to perform one of the most important services of their wedding day, regardless of where they may be.

What inspired your passion for gift design?

We (Amanda & Christina) met in the wedding industry and discovered our shared love of thoughtful gifting during the planning of a styled shoot. We both were already creating custom gift boxes for our engaged couples and had a passion for gifting in our personal lives as well. We realized that although other people want to give more thoughtfully they don’t always have time to put together the perfect gift – not to mention the dreaded run to the post office! The idea of Posh + Walker was born out of the desire to help others gift more thoughtfully without the hassle!

 

How would you describe your products and services?

Posh + Walker offers a variety of curated gift boxes in our online shop, but what we are most passionate about is custom gifting. We create custom gifts for weddings, corporate events, client branded gifts, and so much more. Together, we work with our clients to create a gift that truly represents who they are as a couple or brand. Our goal is to always make our client’s recipient feel loved and appreciated.

We most recently have launched a Thoughtful Gifting Workshop Series where we team up with local vendors to provide a unique experience to our community. We have hosted sold out floral arranging workshops, wellness themed workshops, and have a few holiday centered workshops on the schedule for the upcoming months.

 

What products do you typically provide to wedding clients?  

We work closely with our wedding clients to create custom gifts such as welcome bags, “will you be my bridesmaid/groomsmen” gifts, bachelorette goodies, and more! The options are endless on creating something that is unique and personal for the couples.

We provide espresso bar services at weddings, brunches, showers, after-parties, trade shows, conferences, mitzvahs, meetings, and all social occasions.

 

Do you help your clients create signature drinks?

Yes! We’ve worked with clients to create signature drinks that go with their event theme, the season, the location, their occupations, their favorite taste profile, etc. We love when clients or venues ask us to get creative on their behalf. We also provide personalized menus to match their custom drinks.

 

What is your favorite drink creation to date?

Frozen Devil-Dog-cinno, which is our famous frozen mochaccino blended with actual Drake’s Devil Dog cakes!

 

How many hours of open service do provide at a wedding event or brunch event?

Typically our service is for 2 hours but we’re happy to stay longer when requested in advance.

How early in advance do clients need to reserve your services?

As soon as they can, but we always try to provide a barista and espresso bar for last minute requests.
